• Cretan Dakos Salad: The journey begins with Dakos, a Cretan barley rusk topped with fresh tomatoes, Kalamata olives, and crumbled feta. You’ll taste oregano steeped in olive oil. This dish bursts with Mediterranean sunshine and ancient farming traditions.
• Hortopita: Next, savour Hortopita, a pie of horta (wild greens) wrapped in crispy filo pastry. Traditionally, local foragers gather these wild greens on Greek mountain slopes.
• Santorini Fava: From volcanic Santorini comes Fava, a creamy puree of yellow split peas. Extra virgin olive oil, raw onion and capers add depth. This vegan delight showcases the purity of Aegean ingredients. It celebrates island life and rustic simplicity.
• Spetzofai: In northern Greece, villagers cook Spetzofai in rich tomato sauce. You’ll taste handmade sausages, sweet bell peppers, garlic, and local spices. Each mouthful transports you to mountain kitchens where families gather to feast together.
